Restaurant Phillipsburg-Easton, NJ-PA-New Jersey-Pennsylvania - The Union Station Grill

We would like to take the opportunity to introduce ourselves to you. My wife Meredith and I live in the Lopatcong- Phillipsburg area. We recently purchased the Wardell Steakhouse and Raw Bar located at 9 Union Square in Phillipsburg now known as The Union Station Grill.

I was born and raised in Hope, New Jersey and Meredith is from Cape Cod, Massachusetts. When I was fourteen, I took my first job as a dishwasher at the Inn at Millrace Pond. Quickly learning as much as I could from all the chefs I worked with, I began the first stage of my career working through High School at the Inn at Millrace Pond, The Ryland Inn and The Stockton Inn.

I entered a scholarship contest presented by Johnson & Wales University my senior year of High School and won the New Jersey division. I went to Providence, Rhode Island to compete for first place in the National Division and while my classmates were cooking in the sun in Florida for the senior class trip, I was cooking in a culinary college kitchen. I won first place and received a four year scholarship to Johnson & Wales culinary school where Meredith and I met.

After four years of college, we moved back to New Jersey and in 1994, I began working at Fiddler’s Elbow Country Club as a Sous Chef and within two years, became the Executive Sous Chef. In 2001, I accepted a position at Stanton Ridge Country Club as the Executive Chef and in 2004, I returned to Fiddler’s Elbow Country Club as Food and Beverage Manager.

As Meredith and I quickly learned, most of our neighbors have relocated from central New Jersey like we did. My wife and I enjoy going out to different restaurants, seeing new ideas and tasting wonderful cuisine. With so many people moving to this area, we thought it would be great to share our creativity and love of food with our community.
